Honey-process coffee is not made with honey. There is no beekeeping involved, no honey added at any stage, and no sweetener of any kind in the bag. How Honey Process Actually Works

Coffee cherries arrive at the mill with four layers: skin (the outer red or yellow), pulp and mucilage (the sweet, sticky flesh underneath), parchment (a papery hull), and the bean itself. Washed process strips all three outer layers off before drying. Natural process leaves all of them on. Honey process removes only the first one.

The mechanical pulper takes off the skin and most of the pulp but leaves the mucilage clinging to the parchment layer. The Honey Color Spectrum

Producers in Costa Rica formalized a color-coded grading system for honey process based on how much mucilage stays on the bean and how long it takes to dry. The colors are not added pigments; they describe the actual visible color of the bean during the drying phase, which deepens as more mucilage oxidizes and caramelizes in contact with the sun.

White honey

Roughly 10 to 15 percent of the mucilage is left on the bean before drying, and the drying phase is fast (often under eight days) using high sun exposure. Yellow honey

Red honey

Roughly 50 to 90 percent of the mucilage stays on, and drying stretches to two or three weeks, often under partial shade to slow the process. The slower fermentation that happens during drying adds a subtle wine note that recalls natural process without going as far. Black honey

All of the mucilage (essentially 100 percent) is retained, drying happens in deep shade for up to 30 days, and the lots are turned constantly to prevent mold. Black honey is the riskiest version of the method and the closest to natural process in flavor profile. Expect dense body, jammy fruit, baker's chocolate, and pronounced sweetness. Roasting and Brewing Recommendations

Honey-process coffee roasts best at City+ to Full City, roughly the same window as a clean natural. That range develops the sugars enough to expose the stone-fruit and brown-sugar character without pushing into the roast-forward territory that buries origin flavor. Avoid French roast or any heavily charred development: the sweetness that defines the method evaporates above Full City, and what remains is just generic dark roast bitterness with none of the payoff.

For brewing, pour-over and drip both perform extremely well. The medium-to-full body of honey process means it does not need the heavier extraction of a French press to feel substantial in the cup. A standard V60 or Kalita Wave pour with a medium grind, water at 200 to 205 degrees Fahrenheit, and a 1:16 ratio will surface the stone fruit cleanly. Drip brewers do almost as well with less attention.

Espresso is where honey-process coffee genuinely excels and is underused. Can I find honey-process coffee from Africa?
