Cold brew and iced coffee are frequently sold next to each other and frequently confused, but they are fundamentally different products made by completely different processes. Cold brew is coffee extracted in cold or room-temperature water over 12 to 24 hours. Iced coffee is hot brewed coffee poured over ice. The difference in process produces a difference in cup character that is significant enough that neither is a substitute for the other.
Cold Brew vs. Iced Coffee: Two Different Products
Iced coffee is a workaround. Hot brewing over ice rapidly cools the coffee and dilutes it as the ice melts. Because the extraction happens hot and fast, iced coffee retains the same acids and bitter compounds as regular hot coffee. Pouring it over ice dilutes those characteristics somewhat, but the fundamental chemistry of the cup does not change. The result is usually thinner and more acidic than cold brew, and it oxidizes quickly, going stale within a few hours of brewing.
Cold brew is not a workaround. It is a distinct brewing method with its own extraction chemistry. When coffee is steeped in cold or room-temperature water over a long period, the extraction profile changes at the molecular level. Cold water extracts different compounds than hot water, and at a much slower rate. The result is a cup that is typically 60 to 70 percent less acidic than the same coffee brewed hot, notably sweeter, and more chocolate-forward. Cold brew concentrate can hold its quality in the refrigerator for up to two weeks, making it a practical batch-brew option that iced coffee cannot match.
Why Cold Extraction Works: Time Replaces Heat
In hot brewing, heat does most of the work of extraction. High temperature breaks down soluble compounds quickly, which is why hot coffee is ready in 4 minutes in a French press or 3 to 4 minutes in a pour-over. In cold brewing, heat is removed from the equation entirely and time takes its place. Cold water extracts the same soluble compounds but at a dramatically slower rate, which is why cold brew requires 12 to 24 hours rather than minutes.
The slower, colder extraction changes which compounds are drawn out of the coffee and in what proportions. Many of the chlorogenic acids that produce bitterness and astringency in hot coffee are less soluble in cold water, which is why cold brew tastes smoother and less acidic. The compounds that produce chocolate, caramel, and sweetness notes are more forgiving of the extended extraction time, which is why cold brew tends to emphasize those flavors. This is not a flaw or a simplification of the coffee; it is a genuinely different expression of the same beans.
Concentrate vs. Ready-to-Drink: Which Ratio to Use
Cold brew is typically made in one of two ways: as a concentrate that you dilute at service, or as a ready-to-drink batch at full drinking strength. Most home brewers and most specialty coffee brands produce concentrate.
Cold brew concentrate. Use a ratio of 1 gram of coffee to 4 to 5 grams of water during brewing. For a 1-liter batch, that is 200 to 250 grams of coffee. The resulting concentrate is too strong to drink undiluted; it is meant to be mixed 1:1 with water or milk at service. A concentrate batch produces twice the servings from the same volume container as ready-to-drink, stores better in the refrigerator (up to two weeks), and gives you flexibility to adjust strength by how much you dilute. This is the approach to use if you are making large batches or want to add cold brew to cocktails, smoothies, or recipes.
Ready-to-drink cold brew. Use a ratio of 1 gram of coffee to 8 grams of water. A 1-liter batch uses 125 grams of coffee and produces coffee you can pour straight over ice. Ready-to-drink cold brew keeps for about one week in the refrigerator, not two, and takes more storage space per serving than concentrate. The advantage is simplicity: no dilution step at service. If you are making small batches for personal daily use, ready-to-drink is practical. For larger batches or batch prep, concentrate is more efficient.
Equipment: What You Need to Brew Cold Brew
Mason jar method. The simplest and cheapest approach. Add coarsely ground coffee and water to a mason jar or any glass container with a lid. Stir, cover, and steep. Strain through a fine-mesh strainer lined with cheesecloth, a paper coffee filter, or a fine cloth into a second container. This method requires no special equipment and produces excellent cold brew. The only inconvenience is the straining step.

Grind Size: Coarse, Same as French Press
Cold brew requires a coarse grind, similar to French press. The same logic applies: fine grinds over-extract even in cold water over a 12 to 24-hour steep, producing bitter, gritty cold brew. Fine particles also make filtering more difficult and can clog or slow a paper or cloth filter significantly.
Use a burr grinder set to its coarsest or near-coarsest setting. The grounds should look like coarse sea salt or rough breadcrumbs: visible, irregular pieces rather than powder. A blade grinder produces too many fine particles for cold brew; the fines will pass through most home filters and produce a gritty, harsh result.
One practical note: because cold brew uses a higher coffee dose than most hot brewing methods, you will go through a meaningful amount of coffee per batch. A 1-liter concentrate batch at 1:4 uses 250 grams of coffee. Grinding that much by hand is possible but takes 5 to 10 minutes. An electric burr grinder makes batch cold brew production significantly more practical.
Steep Time: Room Temperature vs. Refrigerator
Steep time and temperature interact. Room temperature steeping (roughly 18 to 22 degrees Celsius in most homes) is faster because higher temperatures accelerate extraction even in cold brew. At room temperature, 12 hours produces a serviceable concentrate; 14 to 16 hours produces a more developed, fuller result.
Refrigerator steeping (3 to 5 degrees Celsius) is slower. At refrigerator temperature, you need 18 to 24 hours to reach the same level of extraction that room temperature achieves in 12 to 14 hours. The tradeoff is worth it for most brewers: refrigerator steeping produces a cleaner, smoother cold brew with less risk of undesirable over-extraction. The lower temperature constrains which compounds are pulled out of the grounds, resulting in a cup with less of the harsh, bitter edge that room-temperature steeping can develop toward the end of a long steep.
In practice: set up a room-temperature steep before bed and it is ready by morning. Set up a refrigerator steep in the morning and it is ready the next morning. Both approaches produce good cold brew; refrigerator steeping produces better cold brew with a little more planning.
Coffee Selection: What Works in Cold Brew
Cold extraction amplifies certain flavor characteristics and suppresses others. The coffees that work best in cold brew have traits that cold extraction rewards:
Medium-dark and medium roast. Cold extraction and darker roast levels have a natural affinity. The roast-developed chocolate, caramel, and nutty notes that appear in medium to medium-dark roasts are prominent flavor compounds in cold brew. Light roasted coffees, especially delicate washed single-origins, can taste thin or oddly sour in cold brew because the bright acids that make them interesting in a pour-over are suppressed by cold extraction, and what remains can lack body and complexity.
Low-acid origins. Brazil, Sumatra, and Guatemala are the most commonly recommended origins for cold brew, and for good reason. Their naturally low acidity and full body produce cold brew that is sweet, smooth, and chocolatey without the tannic or sour edge that higher-acid origins can take on in cold extraction.
Natural process coffees. Natural-process coffees (dried with the fruit intact) retain more body and sweetness than washed coffees from the same origin. These characteristics are particularly well-suited to cold brew: the extra sweetness and fruit weight hold up through cold extraction and produce a richer, more rounded concentrate.
What to avoid. Very light-roasted, high-acid, delicate washed single-origins designed for pour-over clarity. In cold extraction, the qualities that make a bright Ethiopian or Kenyan washed exceptional (precise floral notes, citrus brightness, delicate sweetness) largely disappear. What remains can be flat, unexpectedly tannic, or simply unremarkable. Save those coffees for hot brewing methods where their character has room to express itself.

Coffee absorbs odors and flavors from the refrigerator environment readily, and cold brew that sits open next to strongly flavored foods will pick up those flavors within a day or two. Glass containers are preferable to plastic for long storage; plastic can impart subtle off-flavors over several days, particularly if the container is not specifically food-grade or has been used for other strong flavors before.
Do not freeze cold brew concentrate for long-term storage. Freezing changes the texture and flavor profile in ways that do not improve the result. Fresh batches, made every one to two weeks, are a better approach than trying to preserve a single batch for extended periods.
Common Cold Brew Mistakes
Grind too fine. The most common cause of bitter, gritty cold brew. Cold extraction over 12 to 24 hours over-extracts fine grinds just as 4 minutes of hot immersion over-extracts them. Use a coarse grind throughout. If your finished cold brew has visible sediment or a rough, dry finish, the grind is too fine.
Steeping too long at room temperature. Room temperature cold brew steeped for more than 20 hours can cross into over-extraction, particularly with finer grinds or higher doses. If you are using a room-temperature steep, 12 to 16 hours is the right range. When in doubt, move to refrigerator steeping where the lower temperature gives you more margin before over-extraction occurs.
Using flavored coffee. Flavored coffees (hazelnut, vanilla, chocolate-flavored blends) produce cold brew with a synthetic, muddy flavor that is quite different from the clean, natural chocolate and sweetness of good cold brew made from unflavored specialty coffee. The flavoring syrups and oils added to flavored coffees interact oddly with cold extraction and can turn acrid in a 24-hour steep. Use unflavored specialty coffee and add any flavoring at service if you want a flavored cold brew.
Using the wrong ratio and not diluting. Cold brew concentrate is intensely strong and is meant to be diluted 1:1 at service. Drinking undiluted concentrate is not pleasant and gives a skewed impression of the flavor profile. If your first batch of cold brew tastes overwhelmingly strong or harsh, check whether you brewed a concentrate and forgot the dilution step.
